The older I get, the more and more I've tried to get more creative with my food. Don't be fooled, I still eat pasta for 1/2 of my meals. HOWEVER, I came to realize that crock-pots are quite possibly the best cooking tools in the universe. After starting my first "big girl job", I realized that I definitely did not want to spend my free-time at home cooking for hours. Pinterest and the Tastey app became my new BFF's.
One of my FAVE foods to eat is tacos (if you don't like tacos, you're crazy). This recipe is soo easy and will be ready by the time you are done with work or school!
Ingredients:
- 2 pounds skinless, boneless chicken breasts
- 1 packet taco seasoning mix (I used Old El Paso Taco Original Seasoning)
- 1 16 oz jar salsa (I used Pace Chunky Salsa, Mild)
- 1/3 cup chopped fresh cilantro
- juice from two limes (I just used bottled lime juice because somehow we have 3 bottles from hosting college party "pregames")
Directions:
- Place chicken breasts in the bottom of your slow cooker. Sprinkle taco seasoning over the top, then cover with salsa, lime juice, and cilantro.
- Place lid on top and cook for four hours on high, or 6-7 hours on low. Remove chicken from crock-pot to a separate bowl and shred with two forks. Moisten chicken with small amounts of juice left over from the crock-pot until you get the amount of moisture that you like. I used about 1/2 - 3/4 cup juice.
- Serve with taco shells or tortillas (I usually warm them in the microwave for about 15 seconds!), then add on your favorite toppings. I like to use shredded cheese and pico de gallo.
